    Natural-derived antioxidants are known as substances that make oxidation significantly difficult and delay oxidation when present in low concentrations in food or in the living organism. Antioxidant substances, which are included in the active groups of some enzymes affecting anabolic and catabolic events in the living organism and the whole metabolism, which cause physiological functions to stop or significantly decrease in the absence or deficiency, have increased interest in antioxidant substances and have been the subject of scientific research. In this chapter, it is aimed to give general information about the use and analysis methods of natural antioxidants.
